When comparing water chillers, tank capacity, which simply indicates how much water the unit holds, is not the right parameter. The figure to look at is the nominal cooling capacity.
It is the cooling capacity that determines the chiller’s actual ability to extract heat from the water over a given time and meet a specific demand. It is therefore the only figure that allows an objective comparison between models from different brands.

Water is a key ingredient in baking: it determines the overall hydration and final temperature of the dough, two critical factors for gluten network development and proper yeast activation.
STM Products water doser-mixers and chillers deliver precision in both dosage and temperature, ensuring dough consistency regardless of the season or fluctuations in ambient temperature.

It is the result of a deliberate design choice: maximizing cooling performance while minimizing the unit’s footprint and maintaining consistent water temperature and hygiene.
STM Products uses a small storage tank in which water is cooled via a plate heat exchanger. This is a high-performance, scalable solution that brings water rapidly to the desired temperature in the time between one batch and the next. As a result, only water at the target temperature is dispensed into the dough, with no contamination from hot mains water, which would raise the temperature and prevent stable, predictable recipes.

Yes. STM Products water chillers (TWC range) and water doser-mixers (DOMIX range) are designed to integrate both hydraulically and electronically. This integration enables automated pump control and ensures thermal stability, even during industrial-scale processing and high-volume production runs.

The doser and chiller must be connected not only hydraulically but also electrically, via the pump remote control cable.
When the Start button is pressed on the doser and chilled water is required, the remote control cable activates the pump. This overcomes the system head pressure, allowing chilled water to flow from the chiller tank to the doser. The chiller and doser effectively operate as a single, unified system.

In STM Products water doser-mixers, the bypass function diverts water that falls outside the set temperature range.
On manual models, the temperature can be adjusted by turning the control knob, which operates the mixing valve, until the desired temperature is reached.
On automatic models, the machine independently manages the mixing of available water sources and directs water either to the bypass outlet or to the run outlet connected to the dough mixer.

All STM Products equipped with a touch interface can connect to the STM Cloud platform via an Ethernet port.
This enables remote supervision, management, and support. Users, their service technicians, or, when necessary, the STM team can connect to the machine via computer or smartphone to view real-time operating parameters, output status, and the history of recent alarms. Access to this data helps operators use the machine more effectively and improves troubleshooting efficiency, reducing service times and costs.

There are two fundamental rules.
The first: tank capacity must be at least equal to the volume of water in liters required for each batch.
The second: cooling capacity must be sufficient to meet the application’s cooling requirements.
A simple formula can be used to calculate the required cooling capacity and compare it against the rated figures of different chiller models.

Cooling capacity (W) = M × Δt × 4.186 / 3600
This makes the comparison between machines objective and based on actual application requirements, not just tank size.

A water doser is sufficient when using a single water source, for example, mains water only or chilled water only.
A doser-mixer is needed when an intermediate temperature is required by blending two water sources.
For example, in summer it may be necessary to use primarily chilled water; in spring and autumn, chilled and mains water can be mixed; in winter, mains water, possibly blended with hot water, may be sufficient.
The doser-mixer allows the optimal water temperature to be reached automatically or manually, depending on environmental conditions and the season. To ensure a consistently high-quality final product, fluctuations in flour temperature must be compensated by adjusting the water temperature accordingly.

If the machine is equipped with a latest-generation touchscreen display, a speech bubble icon with a question mark may appear next to the alarm or warning. Pressing it gives direct access to the FAQ linked to that error, with a guided procedure to assist the user in resolving the issue.
On models with seven-segment displays, users can consult the user manual, which explains the meaning of each alarm code and provides instructions for resolving it.

Yes. All STM Products machines are tested on an automated test bench, and the initial flow meter calibration is performed based on the pressure conditions at the STM production facility.
The customer’s installation conditions may differ slightly, which can affect measurement accuracy. For this reason, a guided flow meter calibration is available. On touch models, the procedure is displayed step by step on the screen with infographics.

The fundamental rule for achieving maximum temperature precision is to mix hot or chilled water with mains water, avoiding the direct blending of hot and chilled water whenever possible.
The reason is straightforward: the greater the temperature difference between the two water sources, the greater the variation in output temperature caused by even a small change in the mixing valve position.
If the two water sources have similar temperatures, the system can modulate more precisely and reach the desired temperature more easily. This is why the three-inlet configuration offers greater flexibility and precision.
Some models include a three-inlet configuration as standard. Alternatively, manual models can be fitted with the three-way inlet kit.
