Water is far more than a simple ingredient: it’s the beating heart of every dough, accounting for up to 40% of any recipe. It determines dough quality, the repeatability of results, and how every subsequent stage behaves. Yet it is often the least controlled variable.

STM Water Technology was created to turn that variable into a competitive advantage. We design water dosing-mixing units and chillers that control temperature and quantity with absolute precision from small artisan workshops to full-scale industrial plants.
